Peter covered the commercial side in Australia quite well. Sea Kayaking is a growing sport here and more commercial operators are coming on the scene. There are some on the NSW coast that will rent kayaks out as well. But there is another option. NSW, Victoria and Tasmanian have large active and very friendly clubs. If you were to contact one of them saying you are from overseas I am sure there would be plenty in the club who could take you out on a trip and even lend you a boat. I know I would if I was available. In NSW we don't have much in the way of sheltered bays (I avoid Sydney Harbour as its too busy) but we do have lots of lovely coast line with deserted beaches. The down side is you need to be familiar with surf entry/exits for most trips here. If you like paddle floats you may have trouble finding a kayak with one. Hardly anyone uses them here (certainly on the club scene) and I don't think a lot of commercials operators have them on their boats either, you may want to check. Glorious sunny weather, deserted sandy beaches. What more could you want.
