Mel, Congrads on the new boat! Most kayak weights vary a few pounds on either side of the manufacturer's claim. Most have MORE poundage, but occasionally they may weigh less. Gel coat weights vary according to the color and the employee who shoots it into the mold may be having an off day. Too much gel coat and you get a heavy, though deep, lustrous finish. Too little and you can see light and the fabric weave through the hull. I would prefer light, if an error was made. Plastic boats, OTOH, are generally closer in weight as the plastic resin <powder> is measured out pretty well. Good luck with your new Explorer. Just ALWAYS get someone to help you carry it. It's a rule around our shop.
