I've always been curious how much of a difference a 60 or 45 degree
feather will make while going upwind (as compared to 90). Can this be
estimated?

I suppose you could make a first approximation by looking at the
Cosine of the feather angle. Cos(90) = 0, Cos(75) = .26, Cos(60) =
0.25, Cos(45) = 0.7.

However, it is a little more complicated than that because the blade
does not maintain a constant angle throughout the stroke.
