I experience this cold water dizziness. As far as I know, when the temperature in ONE ear drops, the "calibration" of your balance mechanism is off. The same happens to me when a cold wind blows in one ear, although not nearly as severe as when I roll in cold water. It happens only in cold water: In a swimming pool I once entered a rolling contest, did 50 rolls in 5 minutes and wasn't dizzy at all. The serious solution is wearing earplugs or a scullcap. Medicin won't work. Something that also might work: When you perform a roll, typically just one ear gets filled with water. Immediately perform a roll on the other side, so the temperature in both ears is the same. I never tried this, but theoretically it should work. If anyone wants to try, I'd like to know the result.
