Yeah, trout are fragile, if you gut them it's hard to get them to stay on the 
stick and turn.  I shove a stick through the mouth and out the aft end.  I 
leave the skin alone to protect the meat while cooking.  Just like doing hot 
dogs (that's sausages for you non-gringos) on a stick.
