My boat (Mariner Express) is pre-rigged for sponsons. I can attach them, inflate them and re enter in about 3 minutes and could probably beat that time if I practiced more. The main advantage is the ease of pumping out in choppy water with the sponsons attached. You can then relax after a capsize and gather your wits. Why belittle them? They are just another safety tool.
