I recently purchased an Ultrapod for my small digital camera. Though not
necessarily for kayaking, this is a very small compact tripod that could be
carried in a pocket, but only stands a few inches high, so I don't know if you
could operate it from your cockpit. I don't know how it holds up to salt
water. They make a larger version called the Ultrapod II.  I purchased mine
through www.campmor.com (good price); you can read more details at the makers
