I'd agree here - I think that some folks go too far in showing wood.
If there are several seam lines between pieces and the grain is
wide and/or doesn't match, a nice paint job would be better.  Many
S&G kayaks look kinda cheap au naturel.  Some Betsy Bays look good
with just a bit of wood exposed and clean paint on the hull.

OTOH, on a stripper with really well done contrasting strips 
(yer basic work o'art), it would be a shame to paint it over.
