Patrick asked about classifying kayaks for a race.

The San Juan Challenge makes use of tables come up with by the sound
rowers.
It's the best I've seen for classifying kayaks.  You end up with 3
classes.
High Performance, Fast, and regular sea kayaks.  Their formula
encompasses any one
person kayak be it a folder, a traditional sea kayak, or a surf
ski/racing kayak.

If doing it without those classifications, and you expected a large turn
out.
I would be likely to do
Any kayak/surf ski over 18', 
Plastic kayaks 15' to 18'
Plastic kayaks up to 15'
Composite kayaks under 16'
Composite kayaks 16' to 18'.
