Realizing that you did say flat-water (lakes) kayaking, you still might
wish to look into some of the beautiful rivers in the area. I've done
numerous river trips in the OK-AR-MO area over the years and might suggest
my favorite, the Current River, in MO. Also comes to mind the Buffalo and
Eleven Point, among others.

My practice is to spend several days on the river, taking all provisions
and camping on the gravel bars, but outfitters can work with you for
shorter trips if you wish not to spend nights on the river.

Admittedly, this is not lake kayaking, but might be worth consideration.
The area is very beautiful along the rivers and since many are protected
rivers, the land is sparsely populated, if at all, along the banks. Most
of the rivers in the Arkansas and Missouri areas have gravel beds and
range from clear to partially clear water, depending of course on local
heavy rainfall.
