5-knots sound sustainable given the right genetics. I believe Paul Caffynn
could maintain that pace. Funny thing is both Paul and Chris aren't muscular
guys one would normally associate this type of athleticism with. Guess they
both have an abundance of slow-twitch muscle fibre. They must also have an
abundance of mental stamina too. I think that goes beyond genetics,
something Mike D. left out in his reply.

Ahh, the genetics of good joints vs the genetics of good athletes.  
That brings in a whole lot of stuff that would waste too many 
electrons and time ('specially since I'm supposed to be packing for 
this weekend's kayak trip).

BTW, not all fast paddlers are particularly muscular, even in sprint 
kayaking.  If you've ever met Greg Barton and his paddling partner 
Oscar, you'll see a contrast in body types.  Oscar is a big guy and 
Greg is average.  Greg also has noticably skinny legs!  I guess you 
don't need much for all that leg pumping.

As far as mental stamina goes - OCD has a genetic component :-)
