I LOVE the stretch fleece from Immersion Research.  Available in a couple of 
thicknesses, thick skin and thick skin.  It is tight, stretchy, warm, 
hydrophobic, and the flat seams don't bind or chafe.  I bought the first 
piece for paddling, I now have two long sleeve and one short sleeve.  I wear 
it hiking, backpacking and biking as well as paddling.

It is made from Polartec 4 way stretch fabric.  It can get a little ripe on 
a multi day paddle, but then so do I.
