Sorry for coming late to the discussion, but given that yogurt can be 
dried to a leather and that I use plain yogurt as a direct substitute 
for sour cream in cooking, my simple reasoning suggests that drying 
sour cream may be feasable.  Perhaps a test is in order - bring the 
Imodium just in case :-)
