It appears that the seat location of my kayak is too far back.

After researching the subject of trimming a kayak, I am even more confused
than before I started.

Is there a simple way to check the trim?

One quick and dirty way is to scoop a handfull of water into the cockpit while you're sitting in the boat afloat. The direction and speed that the water rolls away will give you a clue to which way the boat is trimmed. The advantage of this method is that it allows for the precence of the paddler,  which has just as much effect on trim as cargo does.

The only surefire way I know of is to paddle it in a substantial sidewind and 
see if it turns downwind excessively (lee cocks).  If so, move the seat 
forward or put something heavy in the forward compartment.
