I'm not sure how this would adapt to kayaking, but for bicycle commuting, I have a Petzl Tikka Plus headlamp attached to my helmet by a strap. This is in addition to the usual assortment of bicycle lights on the bike fore and aft. The Tikka can point in any direction one chooses, plus it has three levels of steady light and a blinking mode. It also can serve as a small search light. This same arrangement could be used in a kayak, if one were willing to wear a helmet. Some advantages of the helmet light are that you don't have to hold it, yet it is readily accessible since it is sitting on your head, and it can be quickly turned on or off by pressing one finger on the simple control button.
