It would  not be easy to roll with your legs sticking out of the bottom 
of the kayak. I would think it would make the hip snap hard to do.
 I doubt I will be trying this any time soon.

With your legs free you have much more control over your center of gravity and rolling would be easier.

Actually, I think it would be a lot like turning a somersault, only  
sideways.  Might be an issue trying to get any speed up, though, even with  fins.
