This is not about what well trained canoeists can do. It is also not about
what well trained kayakers can do. Most white water kayakers understand that
they must learn to roll their boats. Some skilled canoeists may play the
waves and holes. Most do not! And you can not say that most canoeists can
roll their boats. Rolling is not a high priority for many sea kayakers, and
that does put them at risk when they insist on using little short GO-FAST
paddles before they have developed high grade paddling skills.

 

I do agree with your basic premise. Use the hand paddles, go out in storms,
don't bother with advanced boat handling skills. Do what suits you and pay
up later.

It seems like a good time to pitch changing craft.  I now paddle a surf
ski, almost all of the time.

I greatly enjoy rolling.  But with a surf ski if I fall off I simply
climb back on and resume paddling.
With the venturi bailers in the bottom of the footwells it takes under a
minute to empty the footwells.  I've timed my swim and remount, at 7
seconds it's slower than a roll, but much quicker than a wet exit
followed by a pump out.  

For my boat of choice, go fast paddles are fine.  Rolling is not
necessary, or possible without additional straps.  I would be surprised
to see someone achieve a passable skill set on a surf ski without
learning a remount...

A surf ski is a good choice for a day boat.  I haven't seen one that has
any significant storage.
