The possibilities are endless:

Psychology: group dynamics, interpersonal skills (or lack thereof),
aberrant behavior under stress.

Cooking: Any fool can cook with a home range, food processor, microwave,
etc. (and many do). It takes a real chef to turn out bread, pizza, and pie
on a camping stove.

Hydrodynamics: as reflected in and applied to kayak design

Oceanography: self-evident

Biology: marine and land based flora and fauna

Astronomy: taught under those astonishingly clear skies, away from city
light scatter.

Mathematics: as used in navigation for triangulation and dead reckoning.
Fournier analysis as applied to say, the interplay of standing waves with
ocean swell, further complicated by clapitos. 

Further suggestions for the curriculum of the soon-to-be created Kayak U.
are welcome.

anyway,

the VA Marine Science Consortium offered an oceanography course last spring
and probably will again next year. they also offer a biology course and i
think a marine geology course.

The woman who taught kayaking, ran that one also. The VA MSC is located near
NASA Wallops Flight Facility, which is close to Chincoteague Island. Some of
the oceanography was related to remote sensing of the ocean to measure wind
and rain from space. Some 30 elders visited my rain lab at NASA. the purpose
of the rain lab is to develop a method to measure winds in storms at sea
where it is raining. presently we can measure either wind or rain over the
ocean from space, but there is no way to measure wind where it is raining. i
think that we within 5 years we will be able to measure winds in storms.

I've done bread, pizza, pie & layer cake in my Outback Oven but I'm no
chef.

Kayaks are best cooked directly on a nice bed of glowing coals
Poly kayaks cook much faster than fibreglass kayaks
It's always wiser to cook someone else's kayak
