install bulkheads. imagine the weight of a flooded boat offshore. Imagine having to continually empty your boat when learning to handle surf. I've seen this with folding boats - hassle, hassle, hassle. Sea kayak technology evolved to bulkheads ages ago why does your boat not have them? I'm curious, not judgemental here.

Some of the stuff you mention sounds bulky to store in the cockpit. Consider a combo of on deck storage, under deck and cockpit floor. take the drill to your kayak if necessary and install attachment points for shock cord. Use shock cord and netting on deck; use electricians 'p' clip shock cord and netting under cockpit deck, or glass attachment points in and use shock and netting. Between you legs is handy to store tubular items or some water, attach shock cord loops to the floor of your cockpit, using either glassed in attachment points or any lateral stiffener if you have plastic boat and it has such a stiffener to which you can attach shock cord.

you don't want everything tied so that you get tangled up if you wet exit.
