Hrm, this is a telling statement that something is amiss. The boats just
shouldn't be that different, especially if your outfitting is much better in
the GS. Without seeing your roll, I would guess that it is part technique
and part mental. It is quite possible that you use good technique in the
Breeze and poor technique in the GS. Or it is possible that your technique
is marginal in both boats, however if you have a really strong hipsnap, it
should be possible to roll just about anything.

What might help is if you try to describe your roll in the GS in detail,
particularly focusing on the point where you think the roll fails.

Ya know, I can convince myself either way just by thinking about it. I don't
think I'll have time to try out my theories any time soon, but I would guess
that being lower in the boat is easier to roll... up to a point. If the
cockpit coaming is too high on your body, it will inhibit the bending of
your torso to the side (which is much more important than being able to lay
back).
