Re: paddle jackets. I went "off" and bought the Kokatat Goretex Techtour a couple years ago. Excellant construction, breathable, and the latex wrist gaskets are great. You can stick your arm all the way in and pick up no water, never mind the old "scoop it and send it to the elbow" bit. I also agree that the double skirt keeps you dry in any kind of wind and rain or waves. But! if you have broad shoulders you will find that the double skirt makes it nearly impossible to put on or take off in the Yak without rafting up with somebody. As to the hood, I cannot see buying a paddle jacket without one.
