I've had saved GPS waypoints be off as much as several miles. I suspect I had a 3 satellite (2D) fix at the time. I've never had such errors with 4 or more satellites, but it certainly is wise to cross check GPS against other means of navigation. I'm a pilot as well as paddler, and I never trust any single means of navigation in the air. That said, GPS is wonderful for a pilot. It let's me go directly to my destination with a lot less work.
