I've lost the links after changing computers, but there are lots of sites with short videos of Olympic sprint paddlers. They don't use PFD's or sprayskirts so it's easy to see their legs pumping with each stroke. They have rudders, but they are operated with a stick between the knees to allow pressure to the foot pegs.
