I definitely would not waste my time on Disney unless you want to stand in
line behind a bunch of kids wearing mouse ears all day.

I live in the area, and can recommend the following:

Mosquito lagoon, This is near New Smyrna beach, it is an estuary connected
to the Atlantic with passage to the ocean waters, lots of birds, manatees,
dolphin, etc.

Wekiva -St. Johns River.

The Wekiva is a seventeen mile spring fed river that empties in the
St.Johns - a national heritage river. ( see River of Lakes, by William
Bellville) wekivariver.org -Put in about an hour from Ponce Inlet. The
Wekiva
is a spring fed, pristine, and magnificently beautiful river.It was recently
designated as Wild and Scenice(with the help of yours truely)

There are some rental places but the Kayaks are little plastic play things.

Sharks - no problem.

If you decide to try the Wekiva I may be able to loan you a kayak for the
day.
